Making Your Own Tofu
Someone asked about how to save money on tofu. It has been 30 years since I last made some, and I have lost the recipe. It was in a book that I no longer have, because I can't digest soy products anymore. I did an email search and found only complicated, exotic-sounding recipes. So I am going to tell you as much as I can remember. It isn't a big deal, but you will have to experiment to get the temperature right. Don't let my vagaries stop you. It only costs the price of a pound of the dry soybeans to try this out.

Peach Glazed Carrots
Cook carrots in 1 cup boiling water in a saucepan 5 minutes or until crisp-tender; drain. Combine peach preserves and butter; stir into carrots. Cook over low heat until carrots are thoroughly heated.

Frog Eye Salad
Recipe for Frog Eye Salad. Cook Acini Di Pepe: Bring 6 cups water to a rapid boil in 3 quart saucepan. Add 2 teaspoons salt. Slowly add 1 cup Acini Di Pepe. Return to rapid boil, stirring to separate. Boil only 2 minutes. Cover and remove from heat.

Fruit Bars
Mix with first mixture. Pour into brownie or sheet cake pan. Bake at 350 degrees for approx. 15 minutes. Watch closely!

Easy Taco Dip
Mix sour cream, cream cheese, and taco mix; spread on plate or platter. Let sit about 2 hours. When ready to serve, cover with lettuce, tomatoes and cheese in that order. Serve with tortilla chips.

Raisin Cream Pie
Mix ingredients together and cook. When thick pour into baked pie shell. Will need to double recipe if using a large pie shell. Use the egg whites for meringue topping. Beat to form stiff peaks, add 1 Tbsp. sugar.

Hershey Bar Refrigerator Dessert
Place marshmallows, Hershey Bars and milk in double broiler. heat until melted. cool thoroughly. Add whipped cream mix together pour mixture on crust. Chill 3-4 hours until set.
