| Sparkling Cranberry Juice

Here's a nice beverage for holiday meals and easy to make. All you do is add two ounces of plain sparkling water for each 8 ounces of cranberry juice. Serve in wine or champagne glasses over crushed ice for a pretty presentation.

| Pecan Pie

Beat eggs well and to this add the melted margarine, syrup, sugar, cinnamon, vanilla, flour, and salt; mix well. Add pecans and put into pie shell (unbaked); bake at 350 degrees F until filling is set, about 45 minutes.

| Peppermint Cheesecake

Combine crumbs and butter; press onto bottom of 9 inch springform pan. Bake at 350 degrees F for 10 minutes. Cool. Soften gelatin in water, stir over low heat until dissolved.

| Eggless Eggnog (Sugar and Fat Free)

A great delicious recipe for those who love eggnog but need to watch their fat and sugar content. Combine all dry ingredients and mix well until smooth and thoroughly mixed. Add milk and vanilla mix with mixer until smooth and creamy.

| Cranberry Cake

This is such a festive cake for either Thanksgiving or Christmas and so moist. My son who does not care much for cranberries, likes this cake. In a mixing bowl, beat the eggs with sugar until slightly thickened and light in color, about 5 minutes.

I am interested in the recipe for hot chocolate in a jar, using dry butter milk, dry creamer, etc. I would like this for our foster kids to give as gifts.

| Christmas Pudding

We always had one of these at Christmas, traditionally called a 'clootie' dumpling because they were boiled in white cloths. There are many recipes for clootie dumpling but I find this one easiest and not too rich.
