Pineapple Upside Down Cake
Melt butter in 9x9 inch pan. Spread brown sugar evenly in pan. Arrange pineapple slices on sugar, filling in spaces with pecans. Sift flour, baking powder, and salt together.

Peanut Butter Delight Cake
Preheat oven to 350 degrees F. grease 10 inch Bundt pan and lightly flour. Sift flour, baking powder, baking soda, and salt. Combine sugar, brown sugar, shortening, and peanut butter in large bowl. Beat on low speed until creamy.

Cranberry Cake
This is such a festive cake for either Thanksgiving or Christmas and so moist. My son who does not care much for cranberries, likes this cake. In a mixing bowl, beat the eggs with sugar until slightly thickened and light in color, about 5 minutes.

Cream Cheese Pound Cake
Cream margarine and cream cheese together. Add sugar and mix. Add eggs, 1 at a time. Add flour, vanilla and lemon juice. Put in cold oven.

Mom's Favorite Quick Cake
Tint the apple jelly with the red food coloring or to suit your color choice. Spread jelly between layers, then top cake with remainder of jelly and top with coconut.

Mandarin Orange Cake
Mix all ingredients and bake in 9x13 inch pan at 350 degrees F. for 25-30 minutes. Frosting: Mix dry instant vanilla pudding, crushed pineapple (juice also) and Cool Whip. Frost cake.

Eggless Carrot Cupcakes
I'ts moist and suitable for all and can be frozen. Sift dry ingredients in large basin to incorporate air. Add the sugar and mix. Combine the oil, syrup and cream together and beat for few seconds.
