Microwave Dinner for One
This isn't exactly a recipe but I like to make my own microwave dinners. I boil a packet of mini carrots, fry a panful of onions, mushrooms, peppers, etc. Flash freeze each vegetable in ice cube containers. Put into separate Rubbermaid boxes and keep in the freezer.

Spaghetti Squash Straw and Hay
This is a great way to use up all the Spaghetti Squash in your garden. Also a great way to stretch your food bill. Cooks in the microwave so it won't heat up your kitchen in the summertime.

Dangerous Chocolate Mug Cake
I am not a cake connoisseur but this is tasty and definitely quick and also thrifty because you don't have to bake an entire cake (which might not all be eaten before spoiling) to fulfill a craving. If you like small portions, it's good for two servings.
