Quick Ranch Chicken
Here is a tip when you are in a hurry about what to do about dinner and have either chicken or pork chops out. Found a great recipe. All you do is take ranch dressing and coat your meat and then take bread crumbs and mix with Parmesan cheese. Then bake as usual. It is really good and you can use any kind of ranch dressing and also you can season your bread crumbs too. Hubby loves it.

Meals That Can Be Prepared in Advance
I like simple, easy, and quick. I like Hamburger Helper, frozen dinners, those complete meals and the like. I'm over 4 months pregnant with a 16 month old and my husband at home. We would like to start eating healthier, but my husband and I are both picky eaters. We are also on a VERY tight budget since I just lost my job due to the pregnancy.

Steve's Chicken and Dumplings
Here is a good use for leftover chicken. Mine is for one person. Mix pancake mix (I use this instead of regular baking mix, just because I like it. You can use Jiffy or whatever pleases you.)

Barbecued Country Ribs
In a large resealable plastic bag, combine the flour, garlic powder, salt and pepper. Add rib pieces; shake to coat. In a pressure cooker, brown meat on all sides in oil; drain. Combine the water, ketchup, chili powder and hot pepper sauce; pour over ribs.

Pressure Cooked Beef Stew
In a pressure cooker, brown roast on all sides in oil. Remove roast. Add cooking rack; return roast to pan. Add cooking rack; return roast to pan. Add 4 cups of water.

Tender Lemon Chicken
In a pressure cooker, saute onion and garlic in oil until tender; remove with a slotted spoon and set aside. Brown the chicken, a few pieces at a time, in the cooker. Return onion mixture and all chicken to pan.

Pizza Rolls
Chop or grind pepper and onion; simmer for about 5 minutes in a little water. Drain well. Add remaining ingredients. Scoop out centers of long, rolls. Fill with above mixture.

Cheese Chicken from Leftovers
This is a way to use up leftover chicken. My mom started making this before cream of mushroom soup became a bit hit for fast meals. She uses left over chicken to make what she calls cheese chicken.

Combine first 5 ingredients and bring to a boil. Add salt and pepper and cheese. Add enough half and half to fill the crock pot. Simmer and serve...
