Curried Cheesy Eggplant Soup
Saute' onion and green pepper in butter. Add potatoes, carrots and celery. Add chicken stock and seasonings. Add eggplant. Cook, covered, over moderate heat until eggplant is soft.

Chickpea Soup
A hearty vegetable soup. Cover chick peas with one quart of water ( 4 cups). Add onion and seasonings and beef bouillon. Bring to a boil, then reduce heat to simmer.

Stringy Cheese Soup
Heat the oil and butter in a 5 qt. pot. Add the onion and garlic; saute until the onion is transparent. Add the chilies, tomato, beef stock and base, and water.

Lentil Sausage Soup with Spinach
Very healthy. Wash lentils and place in large pot with water and tomato sauce. Bring to boil; lower heat and simmer as you continue preparations. Remove casing from sausage; saute, breaking up with spoon.

Tortilla Soup
Fry onion and garlic in olive oil until onion is tender. Place in Dutch oven. Puree jalapenos and tomatoes in blender. Add to Dutch oven. Add broth and spices. Bring to a boil; cover, reduce heat and simmer for 1/2 hour.
