I'm interested in trying textured vegetable protein (TVP) flakes. I already use the Morningstar Farms and Boca Burger brands, but thought maybe the flakes might give me a little more bang for my buck.

Easy, flavourful and inexpensive to make. I was craving pad thai and combined a few recipes I found into one, and added my own twist to it as well. I used to use another recipe but found it a bit dry and tasteless so I created this one.

These fried spring rolls are a specialty from Quang Ngai, Viet Nam. Although the combination sounds strange, they taste great. Give them a try and I hope you enjoy them.

| Hot Spicy Tofu and Broccoli

Start your rice. About 15 minutes before it is ready, heat a skillet over medium heat and add oil. When hot, stir in garlic, ginger, oregano, basil, cayenne and sugar. Add tofu and tamari, and stir to coat.

I would like a recipe for vegetarian meatloaf. It should be rich in protein. By vegetarian I mean no meat, no fish, no eggs, and no chicken. I can use milk and milk products.

| Easy Chick Pea Curry for a Crowd

This recipe is wonderful and freezes really well! Great if you want to feed a crowd of people without too much fuss, time or money. I make this and freeze it for lunches.

| Eggplant Parmesan
|
|
Cut eggplant in 1/2 inch slices and peel. Coat with flour, egg mixture and bread crumbs. Brown in oil in frying pan. In baking dish, put a thin layer of tomato sauce, then a layer of eggplant, then a layer of tomato sauce, then a layer of Mozzarella cheese.
