If you must transport your turkey, it can be cooked the day before. When done, let it cool, absorbing the juices. Then carve, laying a bed of any lettuce, a layer of sliced turkey and so on, in a dish.

At Thanksgiving and Christmas I buy the biggest turkey I can find - usually 20-25 pounds. Then I stuff it about 9 pm the night before and put it in a 350 degree F oven for one hour. After that I turn it down to 250 degrees for the rest of the night and wake up to the most fabulous smells ever!...
