When cooking fresh broccoli with long stems, rinse and clean the broccoli; cut off the stems. Leave the stems whole. Cut the florets into large pieces. If the stems are very thick, cut in half.

My tip is about cooking on top of the stove. Our oven went out, and isn't repaired yet. I talked to my mother-in-law, and she kind of laughed and said that I've discovered "Country Cooking."

| Use Canned Tomatoes Instead of Spaghetti Sauce

Use diced or crushed tomatoes from a can in place of spaghetti or tomato sauce, and then add your own spices for an inexpensive, easy, and tasty sauce made to your liking. It's thicker than tomato sauce, which adds more volume and richness to your sauce.

| Roasting Poultry

When roasting a whole chicken, turkey or turkey breast use a "basting" cloth and roast breast-side down for a flavorful moist chicken/turkey. Roasting breast-side down keeps the breast moist because the juices will go down and keep the breast from drying out.

| Easy Biscuits

Easy and delicious. 2:1 ratio. Mix, roll out and cut or drop by tablespoon. Preheat oven 400 degrees F. Bake 20 minutes.

| Mashed Potatoes Without Fat

I discovered a great way for making mashed potatoes, and I don't use any fat in it. While making the potatoes for mashing, I put a can of vegetable broth into a pan, and just simmered it while the potatoes were cooking.

| Soak Beans Overnight
|
|
Always clean and soak your legumes overnight. The next morning rinse, add water and bring to a rapid boil for 5 minutes then lower the heat to medium and let it cook. It cooks well. Don't add salt while it is boiling, because its delays the cooking process.

| Add Brown Gravy Mix for Tastier Soup and Stews

To make tastier vegetables soups and stews, I always add a package of instant brown gravy mix for the last 15 minutes of cooking. It also gives them a wonderful color and well as concentrated flavor.
