I have 22 hens that are kicking into high gear laying eggs. If you, too, are looking for egg recipes, I found tons by goggling "recipe 12 eggs", "recipe 7 eggs", "recipe 10 eggs" etc.

| Add Vegetable Oil to Hard Boiled Eggs

Add a little vegetable oil to the water in the pot when boiling eggs. The shells absorbs just enough of the oil so that the shells then slide right off!

| Over Easy Eggs without Flipping
|
If you like over easy eggs, but hate to flip them, here's a nice thing I learned while cooking for a living. Have a nice flat pan or a skillet that allows for a flat center. Get a squirt bottle with some water, and a good lid that covers the pan or at least the eggs.

| "No Peel" Hard Boiled Eggs

I don't know if anybody has tried this already or sent this in. But here's a way to peel your "hard-boiled" eggs all at once. I don't think it works for "soft-boiled". I didn't want to try that, could be very messy.

| Use a Spoon to Peel Eggs

An easy way I have found to peel hard boiled eggs, is with a teaspoon. Hard boil your eggs whatever way that works for you. I crack the shells then use the spoon to peel the eggs.

After years of trying to make perfect boiled eggs for Deviled Eggs, and ending up with chunks out of them, I have finally found the answers. Begin by placing your eggs in a single layer in a pan and covering with cold water.

| What Kind of Eggs Are These?

When I was in boarding school, they had the nicest breakfast. A large cookie sheet with a small rim would hold many almost fried eggs floating in water. We'd scoop out an egg and eat it with buttered toast. I'm calling them almost fried, because they looked like they were fried, but there was no evidence of pan frying. No crispy edges nor caramelization. Any ideas how there were made?

| Use Your Crisper For Eggs

If you buy in bulk like I do, I have something to share. I love eggs, and find that I can get 5 dozen for a lot less per dozen. The challenge was where to keep them. So, one day, I cut up the cardboard nesting trays they were in and put them inside the crisper tray in my fridge.

| A Pastry Blender For Deviled Eggs

Another use for a pastry blender. I use my pastry blender for cutting up hard-boiled eggs, yellows and whites. I chop them up with my pastry blender and can add them into my holiday dressing in record time. This beats using a fork or knife anytime!
