Beat egg and milk. Add other ingredients. Let stand at least 20 minutes (can stand up to 1 hour). Pour oil 1 inch deep in a skillet and heat (hot oil is very important). Pour mixture through a funnel into the hot grease; the mixture does not have to touch. Brown on one side, then remove to a plate. Pour powdered sugar or cinnamon sugar on top.

Mix pancake mix according to directions.You don't want it too thin. I like medium mixture. Add 1 teaspoon vanilla extract. Heat oil in frying pan (about 2 inches). Add mixture to funnel. Once you take your finger off the end of the funnel, make a circle for the outer edge. Add lines of mixture (leaving spaces between). Fry until golden brown. Yummy!

Drop dough from a funnel into pan of hot oil. Make spirals by swirling the funnel over the pan of hot oil. Fry until golden brown. Remove from oil with spatula and set cake on paper toweling to absorb excess oil. Sprinkle with confectioner's sugar.

Mix all the ingredients together,except powder sugar & oil, beat until the mixture turns smooth.
You need to use a squeeze bottle or funnel to pour the batter into the hot oil. Pour or squeeze the mixture from the center towards the outer side. When the mixture turns golden brown and crispy enough, you can remove it from the oil to a plate. Sprinkle powdered sugar over it, serve warm.

Hi- I don't know about making funnel cakes from pancake mix but here is a recipe that is just as easy. If you are trying to use up some pancake mix I imagine you could follow this same recipe just adding 1 beaten egg and 3/4 cup milk. The pancake mix already has the salt and baking powder so you could try 1 cup plus 2 T pancake mix.
1 cup plus 2 Tbsp flour
dash salt
1 tsp baking powder
3/4 cup milk
1 beaten egg
Wire whisk the above ingredients. Pour in a circular shape using a funnel (or bowl with a pour spout )into about 3/4 in of hot oil. Turn once to brown both sides. Drain on paper towels and dust with powdered sugar.
