Baking for a Diabetic
When living with diabetes, don't be afraid to lower the sugar content of your favorite recipes for baked goods without adding sugar substitutes. For instance, the sugar in a muffin or cookie recipe with dried fruit, banana or applesauce in it can often be cut by as much as half.
What I usually do when testing a new recipe that I want to adjust the sweetness in, is make 2 half recipes in separate bowls, putting 3/4 of the amount of sugar in one and 1/2 the amount in the other.
Bake them as per recipe but in or on separate pans. Taste both and go for the lowest sugar that you can. You can even try 1/2 the sugar for one and 1/4 the sugar for the other and see what you think. The texture may change a little, but you still get to have a favourite goodie. I do not try to reduce sugar in things that are yeast-based, as they need the sugar to turn out their best.

Creamy Frozen Fruit Pops
Cool and refreshing treat for everyone in the summer.
Ingredients:
- 1 small box instant vanilla pudding
- 1 cup milk
- 1 8 oz. container of cool whip
- 1 cup chopped fresh peaches*
- 1 cup mashed bananas
* Use any combination of one cup of fresh fruit.
Directions:
Beat milk and pudding together. Fold in cool whip. Add bananas, peaches, strawberries, pineapple, blueberries, etc. Put in small paper cups. Add wooden spoons, Freeze until firm.

St. James the Major Brownies
Makes 10 dozen.
Ingredients:
- 2 lb. butter
- 3 1/2 lb. sugar (7 cups)
- 12 eggs
- 1 lb., 6 ounces, all-purpose flour (6 cups)
- 2 tsp. salt
- 2 cups pecans (or more if you like)
- 5 1/2 oz.cocoa (1 cup)
- 1 1/2 tsp. vanilla
Directions:
Preheat oven to 350 degrees F. Grease and flour five 13 by 9 inch pans.
Cream together butter and sugar. Beat well until very light and creamy. Add eggs and continue to cream until well-mixed. Mix flour, cocoa and salt. Add to creamed mixture. Set mixer on low speed and mix thoroughly. Do not overbeat the mixture after the flour has been added.
Fold in pecans and vanilla. Pour into greased and floured pans. Bake at 350 degrees F until done, about 30 minutes.

Tuna Salad ala Ritz
This is an easy to make recipe, it stretches a can of tuna, and it is delicious.
Ingredients:
- 1 can of tuna
- 10 Ritz crackers
- Miracle Whip
- finely chopped onions
- sweet pickle relish
Directions:
Crush the crackers into a bowl. Add the tuna, two small scoops of Miracle Whip, onions and relish and mix. Spread on toast or bread and enjoy!

Pancake Gift Mix
Times are hard. Here is an economical family gift that everyone will enjoy. Make the following and mix together well:
- 12 cups flour
- 4 cups powdered milk
- 3/4 cup baking powder
- 3/4 cup sugar
- 2 Tbsp. salt
- 6 Tbsp. powdered egg mix
Place in a pretty container with a card of directions to add 1 Tbsp. cooking oil and water to pancake consistency to each cup of mix and cook as usual. Also add a new hot pad, spatula, and 2 or 3 specially flavored syrups. This gift will be a winner for adults and children alike.
You might also include the mix recipe as it is cheaper than purchasing the mix at the grocery store!

Dried Beef Dip
Ingredients:
- 3 pkgs. cream cheese (8oz. size)
- 1 can cream of mushroom soup
- 5 oz. dried beef
- lemon juice
- 1 bunch green onions
Directions:
Dice up green onions. Add to cream cheese (room temperature) and mushroom soup. Mix with mixer. Dice up dried beef and fold into cheese mixture. Add lemon juice to taste.

Grandma's Oatmeal Cookies
Ingredients
- 1 1/2 cups sugar
- 1/2 cup shortening
- 1 cup buttermilk
- 1 tsp. soda
- 1 tsp. vanilla
- 1 cup raisins
- 2 1/2 cups flour
- 2 cups oats
Directions
Cream together sugar and shortening; add eggs, buttermilk and soda added, vanilla and raisins. Add flour and oats; mix well. Drop by teaspoon on greased cookie sheet. Bake 10-15 minutes at 350 degrees F.

Corn Salad
This salad is really good!
Ingredients:
- 1 can whole kernel corn, drained (reg. size)
- 1 pimento, chopped
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 cucumber, chopped
- 1/2 cup salad oil
Directions:
Mix ingredients and let stand overnight. Very good!

Turkey Crisp Casserole Dish
One of my favorites. Very tasty!
Ingredients:
- 3 cups crushed potato chips
- 2 cups turkey
- 1 cup cream of mushroom soup
- 1 cup milk
- 2 Tbsp. butter
Directions:
Place layer of chips on bottom of baking dish. Add mixture, then put on rest of chips. Bake at 350 degrees F for 30 minutes or until brown and bubbly.
