Jewish Apple Cake

A moist and delicious apple cake. Easy to make and is a tasty treat. Goes great with coffee or tea.

Ingredients:

  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 1/4 cup orange juice
  • 1 1/2 tsp. vanilla
  • 3 cups flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 3 Tbsp. sugar
  • (4) Medium apples, peeled/sliced thin
  • Sugar/Cinnamon Mix, optional *
*Combine 1/3 cup sugar + 1 tsp. cinnamon.

Directions:

Preheat oven to 350 degrees F. Using a vegetable spray thoroughly coat inside of a tube pan. If using, sprinkle sugar/cinnamon mixture in bottom and sides of pan; save some for the top of cake.

Combine cinnamon, nutmeg and sugar. Add apples and mix gently. Set aside.

Combine sugar and oil together. Beat in eggs and mix thoroughly. Stir in orange juice and vanilla. Blend well.

Add combined flour, baking powder and salt and stir in until completely mixed. Batter will be thick and heavy.

Pour a layer of batter then a layer of apples into the pan. Repeat ending with apples. If using, sprinkle top with remainder of the cinnamon/sugar mixture. Bake for one hour and 10 minutes.

Suggestions: Add 2 tsp. of lemon juice to the apples before mixing in spices.

Peaches can be used instead of apples.

I haven't tried this but was told to substitute half of the oil using unsweetened apple sauce.
