Substitutions in the Kitchen
Have you ever started mixing ingredients for a recipe, get halfway through the list, and Uh-Oh, discover that you are out of an ingredient? Well, sometimes it is something that can safely be omitted. It may alter the recipe slightly, but not ruin it. For example, that teaspoon of vanilla will probably never be missed. Or perhaps you can substitute a little lemon, almond, or other flavoring in its place. Other ingredients make a big difference, and you cannot continue without a trip to the store. Or a suitable substitute. Here is a list of many suitable substitutions that I have gleaned from various sources over the years.
You may substitute up to half the shortening or margarine in a recipe with applesauce in baked desserts. Self Rising Flour I make this up regularly and keep it on hand .
Combine all ingredients and sift together 3 times. Store in a Ziplock bag or a large coffee can with plastic lid. Print this out and keep it handy.....you never know when you are going to need it. I started using creamer mixed with hot water and the recipe ends up tasting better. Plus I don't need to go to the store for milk. We always have lots of creamer since we use a lot for coffee. Post Feedback: Click Here Pan Substitutions - When You Don't Have The Right Sized Baking Dish Most of us keep ingredient alternatives or substitutions for those occasions we may not have enough of a certain ingredient, but another equally important list I keep is a pan substitution list that is practical. Post Feedback: Click Here Homemade Confectioner's Sugar or Powdered Sugar Use equal amounts of granulated sugar for the amount of powdered sugar you want to make. Post Feedback: Click Here Substitution For Heavy Whipping Cream I was making a caramel sauce and needed 3 tablespoons of heavy whipping cream and did not have any so I substituted 6 tablespoons of whipped dessert topping and it worked fine. Post Feedback: Click Here Lemons and Limes - Substitution and Tips You can substitute 1/2 teaspoon of vinegar (any kind) for 1 teaspoon lemon or lime juice in any recipe. To get just a few drops from a lemon or lime, prick one end with a fork and squeeze. The fruit can be refrigerated and used again. Post Feedback: Click Here Cake Flour vs. All Purpose Flour For every cup of cake flour called for in your recipes, you can substitute 1 cup minus 2 T. all purpose flour. Post Feedback: Click Here No Cheesecloth for Cheesecloth Bag When the recipe calls for tying up seasoning in cheesecloth bags and you don't have cheesecloth, use coffee filters and stitch them together or fold in a pkg. and staple shut. (Example: pickling spice in cooked chile sauce) Works great! Post Feedback: Click Here If a recipe calls for 2 eggs, and you find you only have 1, you can use 2 Tablespoons of regular mayonnaise instead. This doesn't effect the taste at all.
