Directions: In a large skillet, add olive oil and brown meat. It does not need to be cooked through, but the outside should be browned. Add in cut up onions, water, ginger, garlic and salt to taste. Let simmer for about 10 minutes, covered on medium heat. Add in peppers and cook for another 5 minutes or until you get the peppers to the level of tenderness that you like them. Mix together soy sauce, corn starch and sugar to taste. Add to mixture at very end to thicken the sauce. Serve with salad, rice, or make your own egg rolls. Change this recipe up by adding other vegetables and adding various spices that you enjoy. Challenge for the day: Go into your pantry can come out with a meal that you can make based on just what you have there.
