Thank you K W that was exactly what I wanted. I have been searching for that recipe for years. Dedeswrkshop I will definitely try your recipe. I love the cold pasta salads you have at picnics but can't find one that is not too vinegary. Thank you for the heads up on the different types of vinegars and their uses. Maybe that is why I couldn't find the right one. They were using the wrong type of vinegar.

Never heard of it but here is my own light Italian pasta recipe.

Any pasta any amount! Kids like a good linguinie noodle, makes the kids happy to slurp! I like spirals. Cook and drain and rinse with cold water, set aside.

Any of the following veges diced and/or sliced:
1. green, yellow, or red bell pepper or all of em.
2. onion of some sort thinly sliced.. red or scallions work best
3. in the summer I use FRESH tomato
4. in the winter I use shredded carrot
ANY vege works but these are the traditional Italian blend.

Place veges and pasta in plastic bowl (with lid), set aside.
Prepare dressing either on the pasta, or in a side dish with lid.
Some like to shake a vinegrette, others mix till it tastes good.
1. equal amounts olive oil and RED WINE vinegar.
2. 2,maybe 3 TBLS of sugar or 2,maybe 3 pkt sugar substitute.
3. salt to taste
4. 3, maybe 4 dashes of Italian Seasoning (the bottled kind)
DONE refridgerate and/or serve immediately

I am into quick and painless restaurant side dishes. This one dish is GONE at the end of every gathering!
And I like this dish enough to buy the right vinegar. Have tried it with the other vinegars: balsamic is for wilted lettuce, white is for instant pickled beets, and RED WINE vinegar is for the Italian pasta salad...lol.
