Orange Coconut Crisps

Ingredients

  • 3 cups all purpose flour
  • 1 1/2 cups coconut
  • 1/2 tsp. baking soda
  • 1 cup of softened butter
  • 1 cup granulated sugar
  • 1 egg
  • 1/4 cup orange juice
  • 2 Tbsp. grated orange rind

Directions

Combine flour, coconut and baking soda. In a bowl, cream together butter, sugar, egg, orange juice and rind; stir in flour mixture and blend well.

Shape dough into 2 rolls 1 1/2 inches (4 cm) in diameter. Wrap in waxed paper and chill until firm, about 4 hours or overnight.

Cut dough into 1/8-inch thick slices; place on ungreased baking sheets. Bake for 8-10 minutes or until golden at 375 degrees F.
