No Bake Cheesecake

Here is a yummy cool desert for summer, No Bake Cheesecake! I put this together myself, my own recipe.

Ingredients

  • 1 pre-made graham cracker or shortbread pie crust
  • 1 sugar-free package of Jello "cheesecake flavor" instant pudding mix
  • 1 fat-free 8 oz package of cream cheese
  • 1/2 tub of low-fat or fat-free cool whip topping.

Directions

Follow the directions on the pudding box, stir mix and milk till almost thick, then add the cream cheese and cool whip. Beat till fluffy and thick. Pour this mixture into the pre-made pie crust. Cover and chill in the refrigerator for a few hours.

*Optional: topping can be sugar-free frozen strawberries or any fruit you choose. You can also drizzle melted sugar-free ice cream topping like chocolate or caramel.

This is great for summer, no baking and it's SO YUMMY, my husband loved it! Plus, not a lot of fat or sugar, it's good for you!

I have a recipe which sounds like the one you may be looking for. Mine is called "cool lemon dessert" Really nice lite summer dessert.

2 cups graham cracker crumbs
1/2 cup butter
2 tbsp brown sugar
Press into 9 X 13 pan

Refridgerate 1 can of carnation evaporated milk for 1 hour. Then whip until doubled. Gradually add
1/2 cup white sugar
4 tbsp lemon juice
1 pkg lemon jello dissolved in 1/2 cup boiling water.

Pour over crust and chill 4 or more hours.
Top with whipped topping.

Enjoy!!

I have made this for years: softened cream cheese, sugar free lemon jello mix (dry), cool whip, I mix these ingredients, then put it in graham cracker crumb crust. Then I add low sugar cherry pie filling on top, cool. It really is delicious, my family always wants this for holidays. We are diabetic so this makes almost sugar free. Laverne

My friend served something like this half frozen in dessert cups, minus the graham cracker crumbs or crust. It looked like a soft serve ice cream. It wasn't the consistency of soft serve, but it was good. The only thing that could have made it better other than being topped with some chopped fresh fruit or dessert toppings, would have been to had it a tad more frozen. I really liked it, my hubby didn't.
