Hitachi HB-B201 Bread Not RisingThe breads have been tasty (except for those where I eventually tripled or quadrupled the yeast). I don't ever have to worry about crushing the bread when cutting it with a dull knife; either side of the blade. Storage is no problem. It doesn't seem to carry any charm for a passing rodent. The instruction booklet says nothing about the weaponization of bread flour; so I'm guessing that I'm doing something wrong. If anyone has any "helpful" suggestions, I would love to hear it. I had received a wonderful sourdough bread starter (over 8-years old and very, very sour and yummy), but when I followed the instructions to a "T", I got a 1 1/2 pound loaf which was a total of 3" tall; great paperweight, lousy loaf of bread. I finally watched the machine during the cooking process and found it rose during both rising times in the machine, but fell flat as can be during the baking process. Problem: too much moisture. When I watched the kneading process I found the dough never pulled away from the breadpan walls; it was too wet. I started adding extra flour, 1 tablespoon at a time until the dough formed a nice, spongy ball in the bottom of the breadpan and, when the bread was done, I had a beautiful loaf. I kept track of the additional flour I had added for future loaves, but found that weather conditions effected the bread-moisture on a daily basis, so it's important to keep track of the weather reports. If it's a particularly humid day, add an additional tablespoon of flour, but if the forecast predicts dry days ahead, cut back by a tablespoon. You should have great results, I promise. Update on the bread of obstinate. I tried some warm water (as opposed to normal temp tap water), and the dough approached the top on the first rise. It repeated that on the second rise and then like a building struck by a meteor from the southeast, it collapsed to crouton size on one corner and across the middle. The"loaf" did contain air holes and was more bread-like. This is delicious progress. Now I just need to work on the northwest corner. I don't know how to begin. I wasn't really expecting any assistance with this problem. You guys have seriously impressed me. Sorry I didn't check the email sooner. I was recovering from a 14 hour day in the Texas heat working on a westerly exposure roof. All of you have given me sufficient logical advice (approaches I need to employ) to keep me busy for several loaves. Post By Don (Guest Post) RE: Hitachi HB-B201 Bread Not RisingYes, the water must be tepid, not hot or cool, & I always make sure that the yeast is on top away from the water, as one of my bread makers heats up for a while before starting to mix, but since I found out about adding 1 to 3 teaspoon of lemon juice to the water. These are all good suggestions, except that yeast does not die in a couple of days. It lasts for quite sometime, especially if you keep it in the fridge or the freezer. However, I would suspect that it is the yeast that is causing you problems. It is critical to have warm -- not hot nor cold water to add to your bread maker. Too cold will delay the rising, and too hot a water could kill the yeast. Buy some new yeast, follow the directions and recipes that came with your bread maker, and talk to your neighbours and see if anyone else has trouble with the water affecting their bread. I have never heard of that, but it might very well be true of some very hard water. Certainly worth a try. Post by louel53 RE: Hitachi HB-B201 Bread Not Rising

Once the yeast is opened it is only good for a few days, and needs to be used quickly. Remember the bread mixes you buy with all the ingredients in them have yeast in them as well and if it is a large box of bread mix the yeast will die after a few days. So if I buy the large mixes for making bread I also buy the small foil packets of yeast and add what is needed. I also have a Hitachi, mine's a D102. My questions are; a. does the bread sometimes rise and sometimes not, or has it not worked each time you've used the machine b. are you using the booklet that came with the bread machine c. are you sure that the bucket is clicked all the way down on the shaft--so when you 'start' you can hear the shaft and the inside paddle turning? ( I thought there was going to be a d. but I can't think of anything else at the moment. Ours is a workhorse, and has probably put out 2 loaves a week for at least 10 years. Check that your yeast is fresh by putting a teaspoon or so in warm water. If it foams or grows in a while it could still be good. Post By no name today (Guest Post) |
