Separate your eggs, and beat the whites into a stiff merangue (sp?) before folding them into the rest of the mix at the end. If it's a "from scratch" recipe, add some of the white sugar into the egg whites to help stiffen them. Will help make the cake lighter.

Eggs at Room Temperature

For fluffier cakes, let your eggs come to room temperature 1/2 an hour before mixing your cake batter.

Cake Making Tips

Adding a pinch of baking powder to powdered sugar icing will help it stay moist and not crack.

Spaghetti is great for holding cakes together. Waiting for the icing to set, a few sticks of dry spaghetti will hold the layers in place. Also a pice of raw spaghetti works well to light birthday candles.

Icings won't become grainy if a pinch of salt is added.

Make sure that you allow cake to cool to room temperature before frosting. And whip frosting with a fork before smoothing on with a small spatula for icing.

Use plastic milk bottles, the kind with a handle - for painting. just cut off the top, which leaves an opening to pour your paint into and it leaves you with a convenient handle too. no messy washing up - just throw away :)
