Mexican Cookie Recipe

Anyone have a good Mexican cookie recipe? I'm going to a party Saturday with a Mexican theme. I was asked to bring dessert. Thanks!

This isn't a 'cookie' recipe but a bar recipe instead!

MEXICAN CHEESECAKE
serves 18

6 eggs
1 1/8 cups sugar
3/4 cup margarine, melted
2 cups low-fat cottage cheese
2 cups light sour cream
2 Tlbs. grated Parmesan cheese
1 1/2 cups Bisquick

Beat eggs in a large mixing bowl until light and fluffy.
Add sugar, margarine, cottage cheese, sour cream, Parmesan cheese and Bisquick. Mix well.
Pour the mixture into a greased 9"x13" baking pan.
Bake @300 for 30 mins. Increase baking temp to '325 and bake an additional 30 mins. Cool completely.
Garnish with fruit slices or edible flowers

you can prepare this a day ahead of time

I ended up making Sugar cookies with added Lime zest and juice and I mixed some lime juice with the sugar crystals that I coat the cookies in before baking. I called them Margarita sugar cookies and they were a hit! Also, they were much better than the Mexican wedding cookies that someone else made and brought. I'm a soft cookie person and evidently the other partygoers were as well.

CUERNITOS (MEXICAN WEDDING COOKIES)
1/2 C. powdered sugar
1 C. butter, softened
2 tsp. almond extract
1 tsp. vanilla extract
2 C. flour
1/4 tsp. salt
optional:
1 C. finely chopped or ground almonds or pecans

Preheat oven to 325
In large bowl, beat 1/2 cup powdered sugar, butter, and extracts until light and fluffy. Stir in flour, salt, and almonds or pecans (if desired). Mix until dough forms. Shape into 1 inch balls, or crescents. Place on ungreased cookie sheet.
Bake at 325 for 15-20 minutes. Watch closely until set but not brown. Remove from cookie sheet, cool slightly and roll in powdered sugar. Let cool completely and roll again.

Check this site out as well. In the future, just google what you are looking for. Pretty good chance you'll find it. You can also use: www.dogpile.com, www.ask.com. There are so many. Just take the time and you'll find what you need more then 80% of the time. However, there are times when you will want to pull your hair out too! :o) Have fun

Mexican Wedding Cookies are delicious. We always called them Russian Teacakes when I was growing up, and I think some people call them Sandies, but they are all the same!

You could also probably find some chile pepper cookie cutters or maybe sombrereos, if you want something Mexican themed rather than authentic.
