Soda Cracker Cake

Ingredients
  • 6 egg whites, beaten till stiff
  • 2 cups sugar
  • 3/4 tsp. cream of tartar
  • 2 cups cracker crumbs
  • 1 cup chopped pecans
  • 1/2 tsp. vanilla
  • 6-8 ozs. Cool Whip
  • 1 can pineapple, sweetened and thickened

Directions

Beat egg whites until stiff. Add sugar and cream of tartar to egg whites and beat until well blended. Add cracker crumbs, nuts, and vanilla. Pour into a buttered pan. Bake at 350 degrees for 25 minutes. Let cool. Cover top with Cool Whip. Then top with thickened pineapple. Chill 2-3 hours before serving.

Hi, Elizabeth. to make thickened pineapple, drain the juice into a saucepan and add 1/4 - 1/2 cup sugar, and 1-2 tbs cornstarch. Heat until thickened. Then add the pineapple back to the thickened juice. This can also be used with any kind of fruit and served warm over white or yellow cake.

Hi Jane,
I believe Soda crackers and Saltines are the same thing. One is just an older name for the same cracker. We always called Saltines soda crackers when I was a kid.
