Baked Potato Night

Recently I was looking for some different thrifty ideas for dinner meals, this one my family loves including my husband who is a big eater, "Baked Potato Night". I purchase some baking potatoes on sale, if they are big I plan on one per person the average amount spent is $1.50 to $2.00. I cook some broccoli which was on sale, shred some cheese, left over chicken (what ever sounds good), some times a salad with it. The average price for the whole meal is $4.00-4.50. It is very filling and relatively healthy (fiber, vegetables, protein.) Enjoy!

I like baked potatoes, topped with fried onion and bacon. I also add a little dried chilli

My family loves "Baked Potato Night" also. We use whatever meat we may have leftover, cheese, veggies, salsa...the topping varieties are endless. We do this year round and just cook the potatoes on the grill or microwave if it's too hot for the oven. I always make a green, fruit or pasta salad to go with this. It is a big hit!

WE have done something similar. If I happen to have homemade chili leftover, I will cook the potatoes and heat the chili. Then put the chili on the potatoes and top with shreded cheese. This makes a great winter meal.
