Extra Cupcakes for the Kids

You can have your cake and eat it too! My three small children used to be disappointed when we made cupcakes for bake sales or school events - all those yummy cupcakes and they couldn't have one! Then I started reserving some of the batter to make 3 mini cupcakes just for them. Now I have 2 dozen cupcakes and 3 happy kids.

When making a birthday cake, I also make a cupcake for the blowing out of the candles so that the whole cake doesn't get "sprayed." Yuck!
