Hi, I don if you check back at all but I also have a regal bread machine, I didn't use mine for years and then my mother gave me a cook book. wonderful thing! I never got the recipes that came with it to work, but the cook book i have says it doesn't matter what temp the water is and that you should specifically use dry active yeast not the rapid stuff unless you are using the rapid setting which i still have yet to make it work. it did look like bread but tasted terrible. There are some pretty good books out there now, bread makers were still pretty new when i got mine. Good luck

Traditional White Bread (from my Oster machine book)
1 - 1/2 lb loaf
1 c plus 2 T water
1 T butter or margarine
3 cups bread flour
4 T gluten
2 T sugar
1 T dry milk
1 1/2 t salt
2 1/2 t bread machine yeast or regular active dry yeast
Place ingredients in pan in order listed. Bake on either regular white or rapid white setting.

The very best book I have on breadmaking is Beth's Basic Bread Book by Beth Hensberger. There is too much information to impart all of it, but these are just a few of her tips:
To determine if a loaf is properly risen, press 2 fingers deeply into the dough. If the depression remains, the dough is ready. If is fills in quickly, let rise some more.
If you decide to bake it in a pan, be sure to create a proper loaf before placing in the pan (pan out flat to rectangle, turn in ends, roll up) and slash the top of the loaf. Also, always preheat the oven.
To see if it is done, insert a thermometer and make sure it reads 190 degrees when you take the loaf out of the oven. Bread will continue to cook after you take it out and is completely done at 212 degrees.
Beth also gives good guidelines for baking breads of various pan sizes and types in her book.
To make sure yeast is fresh and alive, proof it. Here are instructions for proofing:

These are just a few tips. The more you know, the better your bread will be. Beth also has a book especially for Bread Machines. I do not have it, but it has gotten great reviews.

This is a 'general' idea of how to use a bread maker. You might want to be careful 'just yanking the basket out of the machine' like she suggests, mine requires turning it before you yank.

doubling the recipe for white bread
I have a recipe for a 1lb loaf and my bread maker goes from a 2-3lb loaf. Do I double the whole recipe including the yeast amount.
The recipe is,
7/8 cup h2o
3/4 cup salt
4 tsp. pd milk
1 tbsp. butter
2 cup flour
4 tsp. sugar
1 tsp. yeast

I am hoping that someone will know if you can double a recipe in a Black and Decker Bread machine. I have a recipe for cinnamon rolls, but would like to save some time and double the recipe. I can't see anything about doing that-i.e. a maximum amount of flour.I have had great success with my machine and make a single recipe, but hope someone has tried this and give me some advice.

my bread sucks why?
I just bought the regal bread maker, I read the manual, measured everything by the book and well..... the first 5 loaves came out like baseballs??? Then I tried again and put a little more water, this time it did come out the shape of the pan, but short and doughy. Help, I so want to make bread, but I am ready to fire this thing out the window lol and just go to the bakery. Any suggestions would be great.

Just double the 1 lb recipe to get a 2 lb recipe and/or double the 1 1/2 lb recipe to get the 3 lb recipe.

This is for the Hitachi Breadmaker -it is very specific about the order of ingredients (taken from another site)
Water: 3/4 cup
Bread Flour: 2 cups
Salt: 1 teaspoon
Sugar: 2 tablespoons
Butter: 1 tablespoon
Dry milk: 1 tablespoon
Dry yeast: 1-1 1/2 teaspoons
1. Pour 3/4 cup of water into the bread pan.
2. Add all dry ingredients except the DRY yeast.
3. Place the DRY yeast on top of the DRY flour. Do not mix.
4. Press the START button
Your oven-fresh bread will be ready in 4 hours and 10 minutes. It is more convenient if you use the built-in delay timer.

I have a Pillsbury bread machine...It's about 10 yrs old, but the recipes should work for all.
Hint: For best bread. Allow machine to knead and then remove dough, place in standard bread pan, let rise, then bake at 350 about 25 minutes. Butter top while hot.
2lb loaf
1 1/4 cups water shouldn't be ice cold or hot..tepid is best or straight from the tap.
4 cups bread flour
2 TBSP dry milk
2 TBSP sugar
2 tsp salt
2 TBSP butter
1 1/2 tsp rapid dry yeast
If dough is not elastic enough, add a bit of water, too sticky, add a bit more flour.
My machine is timed at 3 hours 20 minutes for mix, rise and bake. Once the dough has risen more than half way up the pan, remove, punch down and knead a bit. Place in large bread baking pan, let rise nearly to the top, then bake. Or you can let it do the full cycle in your machine.

Recipe from West Bend Automatic Bread and Dough Maker
Basic White Bread
11 1/2 ounces water 75-85 degrees
2 Tbsp. butter
4 cups bread flour or reg. flour
2 Tbsp. sugar
2 Tbsp. dry milk
1 1/2 or 2 tsp. salt
2 tsp. active dry yeast
Add water and butter to bread pan first.
Mix dry ingredients together, except for yeast, and add to water.
Make a shallow well in center of dry ingredients: add yeast.
Select settings and Turn on.

How frustrating! It took me a while to get used to my machine but it sounds like your experience takes the cake! My first thought is to make sure the inside of the pan is clean but not oiled above the level of the dough ... most rising dough will get "stuck" on oils or anything along the sides of the container and not be able to rise. My next question is, is the dough getting enough heat and moisture to rise and being giving enough time to rise. I've found with my machine that the timed settings don't allow doughs to rise properly at all and I'm left with a tough bread. And I'm sure the mixes or ingredient are all fresh. Do you happen to live in a higher elevation? That would definatly effect the yeast in the dough. I would also try to not mix the dough as much, that could hamper the rising too and cause a tough bread.

over several years have tried at least 5 brands bread machines, regular and bread flours, regular and fast rising yeast, hot, warm, or cold water. many many recipes. bread will not come up like it should. even talked to manufacturers reps. bread will not rise in machine. anyone have any ideas . i am ready to give up.

Here is another one i just found... I have not tried it yet, just make sure the amt. of ingredients don't go over your machines recommended amounts and it should be fine.
Let me know how it turns out for you. I'm out of pecans for the year and won't get anymore til the trees produce here later in the year, so it will be awhile before i make any.

INGREDIENTS:
1/2 cup margarine, softened
2/3 cup milk
2 eggs
2 1/2 cups all-purpose flour
1 cup white sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2/3 cup mashed bananas
1/2 cup chopped walnuts or pecans
------------------------------------------------
DIRECTIONS:
Spray bread machine pan with vegetable oil spray.
Premix ingredients in order listed. Place mixture in bread machine pan.
Select the Quick Bread/Cake cycle. Press Start. Check after 1 minute to see if mixture is well blended.
Cook until cake cycle stops. Remove pan, and cool completely before removing bread from pan.

oops, and i forgot to tell you to add the nuts. I put in pecans. And i have no set amount... just depends on who all will be eating it. Kids aint crazy about too many and hubby wants it full of them...LOL

Banana Bread

3/4 cup Buttermilk
1/3 cup Banana -- mashed
1 1/2 Eggs
1 1/2 tablespoons Vegetable oil
3 tablespoons Honey
1/3 teaspoon Salt
1/3 teaspoon Cinnamon
1/3 teaspoon Baking soda
1 1/2 tablespoons Vital gluten -- to 3 tbls
2 1/4 cups Whole wheat flour
3/4 cup Oats
1 1/2 teaspoons Yeast
Add ingredients according to manufacturer's directions
. Medium color setting. Makes 1-1/2 lb loaf.
NOTE: Watch the dough as the banana may affect the moisture.

This is the one for banana bread that i have. I use the Bread machine flour, i think its Pillsbury. And i omitted the oats , and added in just a bit more flour.

hey... my 'puter died and i am now just getting back online. So sorry~ But I will look and see about that banana nut bread. I had never thought about making it in there, but i bet it would be good!
And on the water, its around a cup. Sometimes it takes less, sometimes more. I just start with 8ozs and add a bit at a time if it needs it. If its 'bumping' the sides then you know you need more.

BREAD
1 cup warm water
1/2 teaspoon vanilla
1 Tablespoon vegetable oil ( I use olive or canola oil)
2 Tablespoons sugar 1 teaspoon salt
1 Tablespoon Yeast. (or 1 package)
3 1/2 cups white flour
Or you can make whole wheat by using
2 cups white flour 1 cup whole wheat flour and
1/2 cup of gluten (available in health food stores)
Just add all this to the bread maker( yeast in the top if there is one) set machine for which ever timing you want tnt!

This recipe came in the book with my Hitachi bread machine. This bread has a really great flavor and is quick and easy to put together. (My bread machine instructs to add the wet ingredients to the pan first).
7/16 cup tap water
1 cup fresh milk
4 cups bread flour
1-1/2 tsp. salt
3 tablespoons sugar
2 tablespoons butter
1-1/2 tsp. dry yeast (Regular Cycle) or...
2 tsp. dry yeast (for Bread Rapid Cycle)

I have a Regal Kitchen Pro and here is the recipe it has with it. I have made it many many times and it is really good.
Classic White
Basic or Rapid setting okay
for a 1.5 lb loaf:
8-9 ozs water
1 1/2 tsp salt
2 TBS butter or margarine
3 Cups Bread flour
2 TBS dry milk
1 TBS sugar
2 tsps Active Dry Yeast
Have all ingredients at room temperature.
(70-80 degrees F)
Measure all ing. into bread pan. Select desired setting(basic or rapid). Select crust setting. Press Start to begin.

I have substituted the dry milk with creamer before and it worked fine.
If you need another recipe besides this one just say so and i will get the others out of the book and post them for you too.
