Our church has potlucks twice a month. I usually take a fruit salad of some sorts. One occasion, I took chicken salad along with a package of rolls (they could eat as a sandwich or on their plate with a fork). Everything I've taken so far has gotten good reviews. I know one dish that goes over well anytime someone brings them are "Dressed Eggs" or "Deviled Eggs", depending on what location of the U.S. you're from. Also, a beautiful green salad, along with a few bottles of different varieties of dressings, also goes well. Best of Luck!

Muffins. You can buy the packaged mix that is super simple just add milk. And the mix comes in several different types such as blueberry, wild berry (really good!), Cinnamon, etc.

We have the same for potluck at our church. Things that seem to disappear quickly. Whipped cream - plain, or with sprinkles. Put in a big bowl with a spoon. The kids devour it quickly. ;p
Rocky road pudding. (aka chocolate pudding with mini marshmallows) you can even swirl in a bit of whipped cream for a color variety.
Jello w/ cherries (maraschino cherries) inside. The kids don't seem to want it with fruit salad in it but they vie to see who can get the most cherries.
Cheap pizza - though our church bought a pizza oven so they could be cooked quickly and completely.
Crock pot soups - We just had a rice dish that went banana's this last Sunday potluck. All it seemed to be was cream of mushroom soup, rice and an extra can of mushrooms thrown in! It can be done thicker so a rice dish, or thinned out (like it was for church) eaten as a soup.
Crock pot chili - Large Can of V8 juice, 1# any browned meat (italian sausage, ground beef, ground turkey, chicken, or ground pork), 3 smaller cans of kidney beans, and a can of whatever fixing you like in it too (mushrooms, diced tomatoes w/chilies etc). When I cook it, I throw in a diced onion and some garlic. but you can do that with the dehydrated stuff from the spice rack too. ;p
Mini wieners cooked in barbecue sauce in a crock pot, meatballs in gravy. Due to the # of little ones at our church someone tries to bring hot dogs. A sure thing for some of the more picky eaters.

Punch. that is something that is often overlooked and thankfully is now supplied each time at ours. Everyone needs something to drink and water just doesn't cut it most of the time.. Summertime - a good cheap is lemonade koolaid. winter "good" punch is 1-2 2 liter bottles of white soda (ginger ale, twist, 7up, sprite, etc just prefer non caffeine) a frozen can of juice concentrate (orange, multi (kiwi, strawberry, orange etc) and LOTS of ice. Mix well If you are trying to make it last (to stretch it) you can also add a pouch of koolaid (2 qt packet) and 1/2 cup sugar if not sweetened. Then add the full 2 qts of water. Another thing to add if you need to stretch it is apple juice. The biggie is to keep the ice floating. This keeps it cold and stretches the punch as it melts to create MORE punch ;p

I imagine that if you were able to bring an electric burner, (a double burner would be great) a bowl, a whisk, a spatula, a nonstick pan and enough eggs, it would be a great hit. You could set up (and man) a 'fresh scrambled egg' station. Perhaps you could partner with someone willing to bring grated cheese, some cut veggies (onions, green peppers, etc) and egg 'additions' who could help you do the cook to order servings, allowing people to create their own omelets. A quartet of friends would be even better, if one could bring crumbled bacon, and one could bring thinley sliced sausage to add.
I don't know if that's the 'easy' thing to do, but it would probably be the most appreciated : )
