Golden Pumpkin Muffins

Ingredients:
  • 2 cups packaged biscuit mix
  • 1/2 cup sugar
  • 1-1/2 tsp. pumpkin pie spice
  • 3/4 cup milk
  • 1/2 cup canned pumpkin
  • 1 slightly beaten egg
  • 2 Tbsp. cooking oil

Directions:

Thoroughly combine biscuit mix, sugar, & pumpkin pie spice

Mix milk, canned pumpkin, egg & cooking oil

Stir into dry ingredients until blended

Fill greased muffin cups or use the paper cups, 2/3 full

Bake in 400 degrees F oven about 20 minutes

Makes 1 dozen

I'm guessing that Bisquick or Jiffy Baking Mix is the Biscuit mix used. I am going to try these but I am going to use a loaf pan instead of muffins. I'll adjust temperature and length of baking as I go.
