RE: Should I Blanch Corn?
To freeze corn off the cob, I use this recipe my mother-in-law gave me.

16 cups (1/2 a bushel) whole kernal corn
5 cups water
1/2 cup margarine or butter
8 teaspoons sugar (can be left out if the corn is sweet)
1 teaspoon salt

Combine corn, water, margarine, sugar and salt in a large saucepan or dutch oven. Bring to a boil. Boil for 10 minutes, stirring occasionally. Cool by setting pan in a sinkful of cold water and stirring ocasionally. When cool, spoon into freezer containers or plastic freezer bags and freeze. This yields 4 quarts.

RE: Substituting Oil for Butter in Recipes
I'm not sure where I got this information, but here is what I have:

Butter/margarine = Oil
1 tsp = 3/4 tsp
1 tbsp = 2 1/4 tsp
2 tbsp = 1 1/2 tbsp
1/4 cup = 3 tbsp
1/3 cup = 1/4 cup
1/2 cup = 1/4 cup + 2 tbsp
2/3 cup = 1/2 cup
3/4 cup = 1/2 cup + 1 tbsp
1 cup = 3/4 cup

For types of oil to use - Olive oil is the best choice because it is 77% monounsaturated (the "good" fat.)

Extra virgin olive oil - meets exacting taste and aroma standards - Use for dressings, marinades, sauces & for basting meats & drizzling over soup and vegetable dishes.

"Pure" olive oil - all-purpose cooking oil for grilling, sauteing, stir-frying and in pasta sauces.

"Light" or Mild olive oil - is olive oil with just enough extra virgin olive oil added to give it a light flavor and color. ... View related article.

This is also from "The Gluten-Free Gourmet" by Bette Hagman. As a general rule you can use the following substitutes. For each cup of wheat flour called for in a recipe substitute one of the following:
7/8 cup rice flour
5/8 cup potato starch flour
1 cup soy flour plus 1/4 cup potato starch flour
1/2 cup soy flour plus 1/2 cup potato starch flour
1 cup corn flour
1 scant cup fine cornmeal
1 cup of the GF flour mixture (2 parts white rice flour, two-thirds part potato starch flour and one-third part tapioca flour) ... View related article.

RE: Recipes Using Egg Noodles
I have a recipe I got from "The Tightwad Gazette" for creating a casserole dinner.
1 cup main ingredient (tuna, cubed chicken, turkey, ham or seafood)
1 cup second ingredient (thinly sliced celery, mushrooms, peas, chopped hard-cooked eggs)
1 to 2 cups starchy ingredient (thinly sliced potatoes, cooked noodles or cooked rice)
1 1/2 cup binder (cream sauce, sour cream or a can of soup)
1/4 cup "goodie" (pimento, olives, almonds or water chestnuts)
seasoning
Topping (potato chips, cheese or bread crumbs)

Thoroughly mix your combinations of the above ingredients. If it seems dry, add 1/2 cup milk or stock. Place in a buttered casserole dish and bake at 350 degrees for 30-45 minutes.

RE: Recipe for Angel Food Pudding and Fruit Cake
I just made this the other day -
One angel food cake bar cut into bite size pieces
one box instant pudding, mixed according to directions on box
one small can crushed pineapple with juice
3 medium bananas, sliced
one quart fresh strawberries, washed and sliced
one large (12 oz) cool whip
one small jar maraschino cherries, rinsed

Layer cake on botton and other ingredients as listed above.
don't mix together just layer. Chill.

I've also used cantaloup instead of strawberries and white chocolate pudding instead of vanilla. I also use sugar free pudding and fat free cool whip so diabetics can enjoy it too. I think any in season fruit would work. ... View related article.
