Married to a published author who eats anything I make and declares it "good"! Enjoy making casseroles, slow-cooker meals, trifles, and baking desserts. Mother was a "gourmet" cook before that term was popular, and I tried to learn from her. Now that I'm age enhanced and energy challenged, I fall back on easy preparations. Thanks, Thrifty Fun!
I agree with previous "poster"; that is a lovely tribute. At last we learn how you started your talent for recipes. I believe I have archived most of yours over the last few years! (And use them, too.) Please pass on my thanks to your mother...and, again, I thank you. Cay from Fl ... View related article.
Third tip: You can add a drop or two of food coloring while beating. Don't add too much, as you want the result to be airy pastels, not in-your-face color! ... View related article.

Thanks again, Connie. I'll be trying this soon. Another substitution for the meatballs is to take some Healthy Choice sausage (Kielbasa or similar), slice it into a food processor with steel blades inserted, grind it and then proceed with the meatball "construction." This makes this dish a bit healthier and is every bit as good. I like to grind up the sausage, skin and all, 'cause I'm kinda lazy! Cay from FL ... View related article.
Thank you, Connie! We had this tonight and enjoyed it. Glad I fixed four servings for the two of us, for we look forward to leftovers. I have flagged this recipe and will be returning to it. Hope we have guests sometime!!! Cay from FL ... View related article.
I agree with gardenlady and add that if you ever go camping or on a boat with a galley, the pressure cooker is nearly indispensable. Go for it (or them); just don't stint on quality and do be sure the pressure cooker is stainless, not the cheaper aluminum. Unless you have a big family, don't get too big a crockpot (be sure the ceramic insert is removable for cleaning). There's one out now that has 3 different-sized inserts! Cay from FL ...
