This year we were given 13 (jack o-lantern) type of pumpkins, I too didn't want to waste them. We removed all the seeds -which we cleaned, boiled in a light salt water, drained and then baked until crisp for snacks. Then peeled and chunked into pieces with a little bit of water and steamed away, I used a 18qt nesco cooker and did this in batches over 2 days. We then pureed the pulp and froze 32 quarts of pumpkin in food saver bags. They lay nice & flat. We then took the last 10 qts of pumpkin puree and cooked over night with cloves, allspice and cinnamon for the best pumpkin butter ever! Which some we have refig and rest froze in mason jars. Now ready to use whenever I need it. No more store bought for us. We also composted the scraps that were left. No wasting here. We are making pumpkin roll and pumpkin pie for the holiday. Enjoy! ... When I'm making any type of muffin or breakfast cake from box or scratch ~ I add in 2 packets of the maple low sugar oatmeal packets. I like the little bit of oats added to my recipes, and helps use up the extras in the cupboard. I would think that a bran muffin mix would be tasty with the peaches n cream flavor. The only thing you may have to do extra will be adding in a tablespoon or two of water or the liquid in the recipe. I also add in to my muffins a scoop of fiber one cereal for extra fiber in addition to the oats. Turns regular items a little healthier in whole grains and fiber content. Enjoy! ... I have my aebleskiver pan for 6 months now, I use generic spray pam ever time before placing the batter into the pan. I also find that the pan needs to be at least medium to high heat for the entire time of cooking them. My kids love it, we make plain pancake puffs, wheat puffs, and corn muffin puffs. I serve on the side homemade raspberry spread, maple syrup, powered sugar and cinnamon all on the side and we 'dip' to our choice. For clean up I wash in hot water and lightly coat pan and place on papertowel so it's ready for the next time. ... View related article. |

I freeze it. Then when I need to bring a dessert to a party I make sugar cookies from a bag mix. Once cookies are cool. Microwave frosting 30 seconds and icing them up. Hi, I'm diabetic (T2) for almost 4 years now and here are 2 of my quick ice cream maker dessert. Just remember even sugar-free should be in moderation. You may want to make sure of the size of the ice cream maker and adjust the amounts of ingredients if needed. My maker is a 2 quart. Enjoy.
Sugar-Free Pudding Ice Cream (reminds you of the famous pops) 1 package (store brand) vanilla or chocolate sugar-free pudding 1 1/2 cups 2% milk 6oz vanilla low fat yogurt 1 teas vanilla extract Whisk all ingredients together and pour into ice cream maker until thick. My machine stops on its own. Freezes well for later in single containers.
Sugar-Free Slushy Make 1 quart Sugar Free drink mix in a pitcher from instruction on package. (i.e. Crystal Light or store brand - Lemonade, Fruit punch, Iced Tea) I usually save half of the beverage for another time or just to drink. Use 1/2 quart of the drink Add 1 cup mashed fruit of your choice (strawberries, blueberries or even canned fruit cup drained) Mix well and add 4 packets of Equal or sugar substitute (helps cut edge off fruit).
