First of all, I highly recommend the American Heart Association cookbook. I borrowed one from our library and copied what I thought sounded good. So, far everything that I tried are keepers!
Tonight's dinner was Turkey Lasagna
8 oz package lasagna noodles (I used whole grain) 1 lb. ground turkey breast 8 oz. fresh mushrooms, sliced (2 1/2 to 3 cups) 1/2 cup chopped onion 3 medium cloves garlic, minced 3 cups no salt added tomato sauce (couldn't find, but used one with sea salt) 2 tsp. dried basil, crumbled 1/2 tsp. dried oregano, crumbled pepper to taste (I used 1/8 tsp.) 10 oz. frozen spinach (I used the lowest sodium), thawed and squeezed dry 16 oz. nonfat or lowfat cottage cheese (2 cups) dash of nutmeg 8 oz. part-skim mozzarella cheese, grated (2 cups)
Spray 13 x 9 x 2 baking dish with non stick spray (I used two smaller pans...so to eat one now and freeze one for later)
Cook noodles according to directions, omitting salt and oil.
In a large nonstick skillet over medium-high heat, combine turkey, mushrooms, onion, and garlic. Saute until turkey is no longer pink, stirring occasionally.
Cover skillet and cook over low heat until mushrooms have released their juices. Uncover and cook over high heat until juices evaporated. (I had to drain it out.) Stir in tomato sauce, basil, oregano, and pepper. Reduce heat to low and heat through. 5 to 6 minutes.
In a large bowl, combine spinach, cottage cheese, and nutmeg, stirring well.
Arrange 1/3 noodles in baking dish; add 1/2 spinach mixture, 1/3 of turkey mixture, and 1/3 cheese. Repeat layers. Finish with remaining noodles and turkey mixture, and cheese.
Cover dish with foil and bake 34 to 40 minutes, or until thoroughly heated. 375 degrees F. It was yummy! My new favorite. You will not miss the salt. ... View related article.
This is for Deeli; in regards to a tart, Yankee Candle sells them. It's just a small pie like shape of scented wax. They can be burned in electric tart warmers or in ones that use tealight candles on the bottom. Once heated they turn into a liquid form. They can be heated up a few times before you have to change them. To do that just put it in the freezer until it hardens again. The best thing about them is that you can change your scents often rather than be committed to one scent. ... View related article.
Regular mayo has eggs in it. If you are really trying to stay away from eggs. Hellman's low fat has egg whites in it. I use a product called All Whites, which is just that all egg whites. I know it costs more than eggs, but it's so convenient and it tastes good. Since one poster said that she never adds eggs, I'll try that next time. :) ... View related article.
I just threw a pirate party for my son's birthday. I asked my sister-in-law to help me with the pirate map. She used the tea bag method. I had purchased pirate hats for the kids who were coming to the party at our local Dollar Tree. The pirate left them a note where their loot bags had been. We had the kids count out loud their paces and they followed the map. It really turned out great.
The last note brought the kids back inside for their treats. :)
