This one we've had forever & I love it. Porcupine Meatballs with Pasta 1/2 cup uncooked rice 1 lb. ground beef 1 sm. onion, diced fine 1 egg 1/2 t. salt Pepper to taste Sugar to taste 1 can stewed tomatoes ; diced 1/2 green pepper, diced 1 med. jar of V - 8 Juice Cooked pasta
Rinse rice, cover with cold water & let soak for about 1 hour. Drain well. Combine the rice, ground beef, onion, egg, salt, pepper and sugar. Mix until well blended. Shape into meatballs. Brown in skillet on all sides. Place meatballs in a baking pan. Pour in the tomatoes. Stir in the green pepper. Cover with lid/foil and bake in a 350*F. oven for about 1+1/4 - 1+1/2 hours. Hi, Robin from Washington, IA These are simple & deelish. I've made some apple filling & some strawberry-banana jam just too try it.
