RE: Potatoe Soup that Uses Milk
This is our favorite recipe. It comes from an Amish Cookbook. Karen

Wisconsin Potato Cheese Soup

2 tbsp. butter or margarine
1/3 cup celery, chopped
1/3 cup onion, chopped
4 cup potatoes, diced and peeled
3 cups chicken broth
2 cups milk
1/4 tsp. pepper
1 1/2 tsp. salt
dash paprika
2 cups cheddar cheese, shredded
fresh parsley, chopped (I don't add this)

In a large saucepan, melt butter over medium high heat. Saute clery and onion until tender. Add potaotes and broth. Cover and simmer until potatoes are tender, about 12 minutes. In batches, puree potato mixture in a blender or food processor. Return to saucepan. Stir in milk and seasonings. Add the cheese and heat only until melted. Garnish with parsley and cheese. Yield 8 servings.

RE: Peanut Butter Candy Bar Made With Crackers
This is a great recipe. We really like it alot. We change the proportions of the chocolate and butterscotch chips as we prefer more chocolate.

Kit Kat Bars
8 oz. waverly crackers, divided
1 cup butter or margarine
1/2 cup milk
2 cups graham cracker crumbs
1 cup brown sugar
1/3 cup sugar
2/3 cup creamy peanut butter
1/2 cup milk chocolate chips
1/2 cup butterscotch chips

Place 1/3 of the crackers (about 25) in the bottom of an ungreased 13 by 9 inch pan. In a saucepan, over medium-high heat, melt the butter. Add milk, graham cracker crumbs, and sugars, bring to a boil. Boil, stirring constatnly, for 5 minutes. Pour half of the mixture over crackers, carefully spreading to cover. Place half of the remaining crackers (aboout 25) on top. Spread with remaining sugar mixture. Top with remaining crackers. In a saucepan, over low heat, stir the peanutbutter and chips until melted and smooth. Spread over crackers. Chill until firm, about 1 hour. Cut into small squares. Yield 3 to 4 dozen.
