RE: Pork Chop Recipes
Apple Bacon Stuffed Pork Chops
Making the Stuffing:
9 slices of bread
1 stalk of celery
&frac; cup shredded carrots
2 cloves of garlic or 1 TBSP of jarred garlic
1 small onion
1 Granny-Smith apple (cored, save the core for Port-reduction sauce)
5 strips bacon, cut into pieces
2 eggs
salt to taste
freshly cracked pepper
juice from &frac; lemon

Lay the bread on a baking sheet and toast in the oven at 350 for about 6 minutes on each side.
Let cool, then tear apart the bread into small pieces.
Dice the celery, onion, garlic, shallot, and apple.
Fry the bacon and set it aside.
Saute the vegetables (celery, carrots, garlic, onion, and carrots) in olive oil until tender. Add the herbs and seasonings. If it's a bit dry add a TBSP of butter.
Let cool, and min into the bread crumbs. Add the bacon and fold in two eggs.

Butterfly pork chops and stuff with stuffing and bake until done; about 30 min.

Apple Port Reduction:
1 bottle sweet red wine, minus a cup for the chef
10 or so peppercorns
1 Granny-Smith Apple (including core of this apple and the one above)
1/3 cup sugar

Combine all the Apple-Port ingredients and bring to a simmer.
Let it reduce as long as possible.
Strain through a cheesecloth and add a cornstarch slurry until thickened.

RE: Max and Erma's Tortilla Soup Recipe
I love Max and Erma's Tortilla Soup! Now that we moved to the beach the closest Max and Erma's is an hour away in Myrtle Beach. So here is the recipe that tastes just like the real thing.

Ingredients:
&frac; cup butter or margarine
&frac; cup all-purpose flour
3 cups chicken broth
1 cup milk
8 ounces Velveeta process cheese food, cubed
10 oz. can RoTel brand tomatoes and chilies
2 cups cooked, shredded chicken
1 tsp cumin
1 tsp chili powder
salt and pepper to taste
flour tortillas, about 4-6
shredded Colby Jack Cheese or Mexican blend cheese

Directions:
If I do not have cooked chicken, I cook a chicken breast in the soup pan first then I follow these instructions without washing pot.

1. In a pot, melt butter over medium heat. Stir in flour and cook, stirring often, for about 3 minutes.
2. Slowly whisk in small amounts of chicken broth at a time, then whisk in milk.

3. Reduce heat to low and stir in Velveeta cubes, stir until melted.
4. Stir in RoTel, chicken, and spices.

5. Once soup is heated through, it is ready to serve at this point. However, if you wish to make tortilla strips, it can sit over low heat while they are made. Stir the soup occasionally.

For tortilla strips, cut tortillas into strips spray with butter flavored cooking spray and bake in 350 degree oven until crispy. Spoon a ladle of soup into a bowl, top with tortilla strips and shredded cheese. ... View related article.

RE: Baked Caramel Popcorn
Thanks for everyone who has responded. The recipe that I use is as follows:
* 5 quarts popped popcorn
* 2 C. brown sugar
* 1 C. butter
* 1/2 C. corn syrup
* 1 tsp salt
* 1/2 tsp baking soda
Bake in the oven at 250 degrees F. for 15 minutes, stir and repeat the baking 3 or 4 times.
It starts to get powdery after the 2nd and third baking cycle. Thanks again for everyone's assistance.

Sprinkle Diatomaceous Earth around the area where the spiders invade. You may be able to get Diatomaceous Earth (DE) at Walmart but any pool supply store should have it.
