This recipe was given to me by a Colombian friend. Because white corn meal is not always available in the US, she used prepared MASA ( you need to salt to taste)- corn meal dough. In Tx it is sold in the bakery dept or you can make your own with MASECA. Just pour water, add salt, mix and knead until it all sticks together. Form balls, press to desired size (with press or plate), fill with finely chopped whatevers, fold over, press 1/2 of a bowl over the ingredients-hard enough to cut the dough.
