Stuffed Yellow Peppers

I recently found 12 beautiful yellow peppers marked down, took them home and stuffed them for a delicious 'meal in a cup'. Stuffed Yellow Peppers

Ingredients:

  • 12 yellow peppers
  • 2 lb. lean ground turkey
  • 6 eggs
  • 1/2 cup tomato sauce (paste or catsup will work also)
  • 1 cup old fashioned oats
  • 1 finely chopped small onion
  • 1/2 cup finely chopped zucchini (or veggie of your choice. Corn is good)
  • salt and freshly ground black pepper to taste
  • 1 small jar pimentos

Directions:

Wash, remove stems, clean out the seeds from the peppers, then cut the tops of the peppers to make them more like 'cups' so that you woll be able to place the turkey mixture into them easier. (Be sure to save/chop any leftover pepper to add to the turkey mixture.)

Mix turkey, beaten eggs, tomato sauce, oats, onion, veggies, salt, ground pepper, and place into the peppers, then into a lightly greased glass baking dish and bake one hour at 350 degrees F, or until done.

Place a teaspoon of pimento onto each pepper for added color, then serve with a tossed green salad and a whole wheat roll for a wonderful healthy meal.

I cut yellow or orange peppers in half & fill with a sauted rice & veggie mixture.
Then top with Asiago cheese & bake.
