Main Dish Ideas for a Holiday Potluck?

I need a main course recipe for a potluck. Now, here comes the tough part! The potluck is a holiday celebration for my co-workers, we are school bus drivers. Since I leave my house @ 5 a.m. and the party is not until 10:00 a.m. I would like something that would keep and still be yummy.

We are all ready for LUNCH at 10 a.m. and I don't want to bring dessert, there always too many of those. I do have an insulated Pyrex bag, complete with a 9x13 casserole dish.

Simplicity is always appreciated. Ideally what I'd like to do is prep a day or two ahead, and pop it in the oven before I leave for work. The potluck is on the 13th.

What about soup? You could make it ahead of time and just keep it warm in a crock pot. You can transfer it to covered containers for transport, then back into the crock pot on location for a quick warm up.

This one is so easy and tastes good hot, cold, or room temperature.
Mexican Egg Casserole
I pint low or no-fat cottage cheese
1 pt. fresh salsa (refrigerated section of the store) or

2 cans Rotel Mexican tomatoes
1 or 2 cans corn....I like a lot of corn
1 large can sliced olives
1/2 small box of Jiffy Cornbread mix
About 2 cups any grated cheese....I used mozzarella
1 dozen eggs

Mix eggs, cottage cheese, salsa or canned tomatoes. Then add cornbread mix. Add olives, corn and cheese.
Spray 9x13 pan with a no-stick spray. Pour mixture into pan and bake at 325 for about 60-70 minutes. Dish is done when a knife inserted into the middle comes out dry.

Hi Christine,
Here's a favorite of mine to take places. You can put everything in the crock pot the night before and refridgerate it, then put it in the base when you leave in the morning.

Crowd Pleaser Jambalaya

1 box Jambalaya Mix
1 box Dirty Rice Mix
Sausage, chicken or seafood or a mixture cut up (at least 1 lb total)
5 cups water

Line crock pot with liner or spray with no-stick cooking spray. Mix all ingredients together and cook on low for 4 hours.

How about meatballs in the crock pot. I don't care for the frozen kind you get in a store, but lots of people do (or make your own). Put a can of cranberry sauce and one jar of chili sauce (per two pounds of meatballs). You can make ahead the day before and put in crock pot next morning when you get to work plug it in to warm. Trying to keep things warm without a crock pot or oven, will be kind of tough. You could make lasagna in your 9x13 casserole dish and wrap real well in lots of newspapers and towels. That may stay warm for a few hours. Good luck and Happy Holidays!

Chili is always a good option. you make it with or without beans and there are a million recipes on- line for it. Sorry, I haven't found a favorite yet otherwise I would post it.

Oh and cornbread to go with it is an option as well.

How about a pasta dish.You could decorate with a flour cut out of red pepper or a wreath made from greens with corrots cut in shapes and grated onion or cheese for snow on the geeens.

I made the above recipe 'Mexican Egg Casserole' for a wedding reception this past Saturday.
I appreciate you sharing it but, it lacked flavor and didn't go over very well :(
