Black Eyed Peas

Ingredients:

  • 1 lb. black eyed peas
  • 2 smoked ham hocks
  • 2 (14.5 oz) cans chicken or beef broth
  • 1 tsp. sugar
  • 1-2 bay leaves (depending on size)
  • 1 medium white onion roughly chopped
  • 2 tsp. minced garlic (1 large garlic clove)
  • salt and pepper to taste

Directions:

Rinse and sort peas for rocks. Place peas in large stock pot. Add chicken broth and 2 more cups water. Add the rest of the ingredients. Bring to a rapid boil. Reduce heat to simmer and cover. Simmer for 4 hours, stirring from bottom every 30 minutes. 30 minutes before peas are ready, remove ham hocks and chop up meat. Add meat back in and discard bones.
