Silky Looking Cakes

Professionally decorated cakes always seem to have a molten, silky look. To achieve this look at home, frost as usual and then use a hair dryer to "blow-dry" the frosted surfaces (on low) until it looks right. The slight melting of the frosting gives it that smooth, lustrous appearance.

You can achieve the same effect by dipping a knife in very hot water and gently smoothing it over the frosting.
