Recipes Using Cake Mix?

I've come into about 80 boxes of cake mixes, mostly chocolate, a few white and a few yellow. I would welcome any ideas for these cake mixes besides the obvious. I had a great recipe for brownies using cake mix, but I lost it.

They were delicious! I imagine they could be used for cookies, etc. but I am not an accomplished baker and really need some tips. Thanks ahead, and I will be anxiously waiting for your ideas and hints.

I love using cake mixes for cookies! The basics are as follows:
1 cake mix
1-2 eggs
2 Tbls oil
1/4 cup water
Additions (choc. chips, peanut btr., etc)
Bake for 10 min. at 375.

You can also go to recipegoldmine(dot)com and look at their section for cake mix recipes. My favorite is Easy Lemon Bars. YUMMY!

Here's two I've used for years:

Chewy Cookies
cake mix - your choice
2 eggs
1/3 c. oil
1/4 c. flour
Stir together to form dough. Spoon out onto cookie sheets. Bake at 350, 10-12 mins. Use your imagination to add nuts, coconut, chocolate chips, etc.

Easy Cookies
1 chocolate cake mix
1 large egg
1/2 (8 oz) container cool whip or other whipped topping
1 c. chopped pecans or other nuts
powdered sugar
Combine the first three ingredients - stir well (batter will be sticky). Stir in nuts. Dust hands with powdered sugar and shape dough into small balls. Roll in powdered sugar and put 2 " apart on ungreased sheet. Bake at 350 for 10-12 minutes. Cool on wire racks.
BTW where did you get so many cake mixes?

Wow, with that many cake mixes, it would pay you to get this book "The Cake Doctor" by Anne Byrn. It contains 150 recipes that use cake mixes. The ones I have tried are all excellent. Do you think you will get them used up by expiration date?

This is my favorite recipe using cake mix and it freezes beautifully.

Pumpkin pie cake

1 can pumpkin (29 oz)
4 eggs
1 can evaporated milk (12 oz)

1 1/2 cup sugar
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 package yellow cake mix
1 c. melted margarine
1 c. chopped nuts
Direction
beat all ingredients except cake mix, margarine and nuts.
Pour in a 9 x 13 pan sprinkle dry cake mix over pumpkin mixture. Pour melted margarine over cake mix and sprinkle with chopped nuts
Bake at 350 degrees for 1 hour no longer. Top with whipped cream if desired.

And if you get tired of cake and cookies- make dessert waffles. Just mix up the cake batter as it calls for on the box and pour into a waffle iron. Top the cake waffles with fresh fruit (raspberries with chocolate cake is lovely) and ice cream or whipped cream. Fast, delicious, ... what more could you ask for in a dessert?

Easiest Cake Ever

just 4 ingredients

1 can crushed pineapple
1 can cherry pie filling
1 yellow cake mix (used dry right from box)
1 stick oleo, I, melt mine a little, easier to drizzle over top

In a 9x 13 pan, spread pineapple evenly, same with pie filling, Add dry cake mix, sprinkle evenly, last drizzle oleo over the top.
Bake 350 till golden about 25-30 minutes Good, easy, can be served with Cool Whip, on top Enjoy

1-2-3 Cookies

1-8oz cool whip
2 boxes of cake mix - any flavor
3 eggs

Dump all 3 ingredients together and mix (batter will be thick and sticky). Use silverware spoon and scoop out small spoon fulls of batter on greased cookie sheet. Bake 375 for 9 minutes. I like them slightly under cooked. They freeze well.

Be creative:
Chocolate cake mix cookies- dip in white chocolate
Strawberry cake mix -- roll in powder sugar before you bake
Lemon cake mix -- roll in powder sugar before you bake

Here's a recipe I posted on this website. I always keep several boxes of cake mixes and instant pudding for this one. It's soooo easy and sooooo good and moist! Even better with a scoop of ice cream on the side.

Easy Easy Pound Cake

Ingredients
1 box cake mix
1 small box instant pudding (not the fat free type)
4 eggs
1 cup water
1/3 cup vegetable oil
Directions
Mix all together with beaters and pour into greased and floured bundt pan. Bake at 350 degrees F for 40-50 minutes (check with toothpick). Let cool in bundt pan for 20 minutes before inverting onto plate.

I received this recipe from my cousin Crystal about four weeks ago and have made about six of these, they're so good (and so easy). I've combined yellow cake/lemon pudding, lemon cake/vanilla pudding, yellow cake/vanilla pudding, caramel cake/vanilla pudding - all were very good and even better with a scoop of ice cream on the side. You can ice this cake if you want, but all I did was dust with powdered sugar.

You won't be disappointed!

I use this brownie recipe for the scouts potluck(I make 2 pans):
1 box cake mix, 2 eggs, 1/4 c oil, 1/4 c water, 1/4 c sugar- Mix the last 3 ingredients throughly and add eggs, Beat and stir in cake mix. Bake 350- 25 min 9x13 pan.

or Triple Fudge Brownies
1 small pkg instant pudding, 1 pkg cake mix , 6 oz chips 1/2 c nuts
Prepare pudding according to directions (with milk) add cake mix, Beat well stir in chips and nuts . use well greased 15x10 pan 350 30 minutes.


I also make Banana Bread
1 pkg cake mix (yellow or white) 1 egg 1/2 c milk 1 1/2 c mashed banana 1/2 c chopped nuts (opt) Makes 2 -8x4 loaf or 12 mini loaf. 350 40 min. Tastes like "hostess" .

Cake mix makes some yummy cinnamon buns (with yeast) Tastes like the box kind, do not get stale like homemade ones.

I'm a lazy cook, so my recipe is easy. Take box of yellow cake mix, put in large bowl. Melt one stick of margarine and add it with two eggs to cake mix. Add large can of peaches juice and all to mix. Put in 9x12 pan and bake till golden brown at 350 degrees. Serve warm with cool whip or ice cream. Tastes like peach cobbler.

Here is my favorite cookie recipe they are soft and great by themselves or make a cookie sandwich by putting your favorite icing or filling in between two cookies. You can also add choco chunks nuts etc. to make them special.

1 pkg. chocolate cake mix
3/4 cup shortening or veg oil
2 eggs
1 tablespoon milk

Mix together well.
Drop with spoon onto cookie sheet. They spread so give they room.
Bake ONLY 9 min. Allow to cool on pan they will be very soft. Firm when cool.

Large box Spice cake mix or any flavor you like.
15 oz pumpkin
1 cup chocolate chips

Mix and bake in muffin tins for twenty minutes at 350. Just make sure they spring back when you touch them.

WOW! 80 boxes?! What a jack pot!

My favorite recipe uses a yellow cake mix. I dont have my recipe here but this one looks like the same only I make it with almond extract and also add sliced almonds to the top. Very rich and tastes like a pastry made with almond paste.

You can make a dump cake. I use one can crushed pineapple and one can cherry pie filling. Dump one can on one side of a 9X13 in cake pan dump the other can on the other side. Sprinkle a white or yellow dry mix over the fruit. Melt two sticks of margarine. Pour over cake mix. Sprinkle coconut flakes and walnut meats all over the top. Bake at 350 degrees for 45mins to one hour.

I would suggest that being you have so many cake mixes that you store a lot of them in the freezer. I have done this in the past and they are always fresh and never get any bugs in them. Good Luck!

Another good book is Quick Fixes with Cake Mixes by Lia Roessner Wilson. I bought mine on clearance for only $5.99 softcover. And remember what they say--there's no calories in cookie crumbs!

Hi, one thing you can do to keep all those mixes fresh, is to put the boxes in the freezer. I did this when the kids where little when cakes mix was on sale. It keep them fresh as the day I bought them.

I know you were probably asking for recipes for all that cake mix, but I'd like to suggest to you a way to share those yummy cookies, cakes & candies: I have a son serving in Iraq where temp gets in 120-140 degrees in August. As you can imagine, our guys/gals over there sweat alot of weight off that they desperately need to hold onto, as well as their sweating away any nutrition at all. It takes sometimes up to 3 weeks for a package to get to them, so it has been a challange getting backed goods to them not molded by the heat & packaging. So, my suggestion is to find a way to share with a troop or someone you already know there; they will for sure share with their buddies as well as the Iraqi kids that beg for toys & treats from our military. Hope this helps someone.

One way to use some of those boxes is to simply make cupcakes instead of a regular cake. Teach your kids (even a husband?) how to do it.

The kids can give them away in the neighborhood -- if they want to be popular. Then they will bring other kids to your house to bake some more. The surplus will be gone in no time.

This has the basic recipe and the input says you can use applesauce instead of the oil. I made the basic recipe with German Chocolate mix and added mini chips and they turned out great.

You could use some as "gifts" Wrap a box of mix with chips, the recipe, and a cookie scoop.

You could give some to a girls club to use. Also could give them the cookie recipe. Would be a good thing for the girls to mix up in one night.

You could mix up a few batches and take them to a nursing home. I plan to do this in the fall when the weather gets cooler:0

I was given the most wonderful book by my favorite sis in law. It is the Cake Mix Doctor by Ann Byrn. Ms Byrn has published several. I can always find a way to make a surprise dessert from her book.

This is my first time posting here so I hope I'm doing this right.If you key in the search bar recipes using cake mixes or cookies using cake mixes there are alot of sites.One site I like is nancyskitchen.com,allhomemadecookies.com and preparedpantry.com is another one they have items to buy but they also have hundreds of recipes, guides and e-cookbooks to download.I know you can make cakes and cookies and freeze them but I'm not sure for how long.I'm sure it would be easy to find out though.Here are a couple of recipes I got during my search.

Recipe 1
Using a puchased cake mix to make cookies is a fun way to save time in the kitchen.This recipewill work with any flavor cake mix.You can also use homemade cake mix.
Prep Time:15 minutes
Cook Time:10 minutes
Ingredients:
18 oz cake mix [any flavor]
1/2 cup butter,softened
1 egg
Preperation:
Preheat oven to 350 degrees.In a large bowl,combine all ingredients at low speed until dry ingredients are moistened and dough is thoroughly mixed.Drop dough by rounded Tbsps.2" apart onto ungreased cookie sheets.Bake at 350 degrees for 9-12 minutes.Cool two minutes on cookie sheets,then remove to wire racks to cool.

If using chocolate cake mix,add 2 Tbsps.water along with egg.You can stir in chocolate chips,coated candy pieces,chopped nuts,or oatmeal.Frost cookies using canned frosting or make sanwich cookies by spreading frosting between 2 cookies.

About five years ago,I discovered a recipe for German Chocolate Cake mix Cookies.I have since adapted the recipe and now make many different cookies using the basic recipe.I love the versatility and ease of this recipe.
Yields: about 4 dozen cookies
1 box cake mix[any variety]
1 cup semi-sweet chocolate chips[can substitute caramel or peanut butter chips or do a combination]
1/2-1 cup oatmeal[I always put in as much as I can]
1/2 cup oil
2 eggs,slightly beaten
1/2 cup raisins[optional]
1 tsp. vanilla[optional]
nuts[optional]

Preheat oven to 350 degrees.In a large bowl,combine all the ingredients blending well.If the mixture is to stiff,add a little water.Drop dough by rounded teaspoonsfuls 2 inches apart onto ungreased cookie sheets.Bake at 350 for 8-10 minutes or until set.Cool1 minute before removing from the cookie sheet.

For altitudes above 3500 feet,add 1/4 cup flour to dry cake mix

Variations:Use white cake mix and add a pudding mix.I added strawberry for tasty pink cookies.If you use pudding you will need to add some water[about 1/4 cup].Also the pudding tends to make the cookie sweeter.

Yields:about 2 dozen

2/3 cup oatmeal
1/2 cup butter or margerine,melted
1 egg
*1/2 cup chocolate chips,butterscotch chips,peanut butter chips,M&M's[your preference]
*For a healthier cookie,substitute raisins in place of chips.

After reading this again I'm guessing this is for packaged cake mix and not a box since it only calls for 9 oz.You could probably use 1/2 a box of mix or if using a whole box you could probably just double the ingedients and just use one box of cake mix.That's just a suggestion as I've never tried any of the recipes.

Preheat oven to 375 degrees.In a mixing bowl,beat the cake mix,oatmeal.butter and egg.Stir in the chips.Drop by Tbsps. 2 inches apart onto ungreased baking sheets.Bake for 10-12 minutes or until lightly browned.Immediately remove to wire racks to cool.

Recipe 4
Devil's Food Cookies
Yields about 5 dozen cookies
1[18.5 ounce] pkg. devils food cake mix with pudding
1/2 cup vegetable oil
2 eggs,beaten
1/2 cup chopped pecans
6[1.45-ounce]milk chocolate bars,divided into squares[optional]
1/2 cup coconut[optional]

Preheat oven to 350.Combine cake mix,oil and eggs in a large mixing bowl and mix well.Stir in the pecans.Drop batter by teaspoons 2 inches apart onto ungreased cookie sheets.Bake for 10 minutes.Remove from cookie sheets and cool completely on wire racks.

Optional:While the cookies are still on the pan place 1 square of milk chocolate on each:spread gently to frost.Sprinkle with coconut.

I hope this helps .Please realize though these are not TNT by me.I have never tried them.
