Fresh Tomatoes with Dipping Oil

Quick, easy, can be used along with the entree, as an appetizer or even a snack.

Ingredients:

  • Fresh tomatoes either sliced or cut into wedges and arranged on plate. Room temperature is best, as this really brings out the flavour of the tomatoes.

  • For dipping oil, it's easy to make your own. 1/4 cup of extra virgin olive oil mixed with one of your favorite herbs or spices (i.e. a Tbsp. or two of crushed rosemary or chives are nice). Whisk together in a small bowl or put in a small jar and shake. Keep unused, leftover oil at room temperature for about a month.

Directions:

Oil can be either drizzled over the tomatoes or put on the side of the plate or in a small bowl for dipping. If desired, a small dusting of parmesan cheese over the finished plate is a nice addition.
