Mustard-Glazed Peameal Bacon (Microwave)

Ingredients

  • 1/4 cup apple cider
  • 1 lb. peameal bacon
  • 4 tsp. packed brown sugar
  • 4 tsp. Dijon mustard
  • Pinch of ginger

In a 9-inch microwaveable pie plate, pour apple cider over bacon; cover and microwave at Medium heat for 9 minutes, turning bacon over and rotating dish halfway through.

Combine sugar, mustard and ginger; brush over bacon. Microwave, uncovered, at Medium for 4 to 5 minutes or until bacon is heated through and glazed. Cover and let stand for 5 minutes before slicing to serve.

What is peameal bacon?

Editor's Note: Wikipedia says " In the United States, ordinary bacon is made only from the pork belly. Back bacon is called Canadian-style bacon or Canadian bacon, but this term refers usually to the lean ovoid portion.

Peameal Bacon is made of main muscle boneless pork loins, short cut from the leaner portion to give a more uniform product. External fat is trimmed to within 1/8 inch. It is then sweet pickle cured and rolled in the tradional golden cornmeal coating giving it the Real Canadian Bacon Trademark.

Your can buy in the states apparently.
