Heat it and pour it on or use a wide and short rounded spatula made for frosting cakes.

I just spread it on with a spatula before I put any of the fixins on it.

Corn or flour? Just spread it on! If it's too hot, it will melt too quickly. But if you are talking about taco shells, just spoon it on.

How about put it in a clean mustard or ketchup container and squeeze it on?

I'd put the sour cream in a baggie and cut off the eng and squeeze it on. I also do this with making deviled eggs. No mess. Throw the bag away when done.

I just stir the sour cream in the container a little bit for a better consistency, spoon some on to the tortilla and spread it out with the back of the spoon ...

I find an offset spatula to be handy for this and many other spreading chores. They are not expensive and you will get a lot of use out of it.

If you're making soft tacos or other such foods, just put the meat and other fillings on the tortillia and put a stripe of sour cream down the middle. Then, when you roll it up to eat it, you'll get sour cream in every bite!
