Cherry Pie

Ingredients

Crust:

  • 2/3 cup shortening
  • 2 cups flour
  • 1 tsp. salt
  • 1/2 cup cold water

Filling:

  • 1 can red cherries, drained (1lb.)
  • 1 1/2 cup sugar
  • pinch of salt
  • 1 Tbsp. flour
  • 1 Tbsp. butter
  • 2 Tbsp. sugar
  • 1 tsp. cinnamon

Directions

Cut shortening into flour and salt mixture. Gradually add cold water. Divide pastry into 2 crusts. Place 1 crust in 9 inch pie pan; reserve other for top of pie.

For Filling: Pour cherries into pie shell. Add half the sugar and salt. Sprinkle flour over cherries and finish with remaining sugar. Dot with butter. Top with crust and sprinkle sugar and cinnamon on crust. Bake at 325 degrees F for 1 hour or until brown.

Ingredients

  • 1 box cherry Jello - not the large box
  • 1 cup water, boiling
  • 1 can cherry pie filling
  • Cool Whip
  • Baked pie shell

Directions

Dissolve gelatin in boiling water, add pie filling. After thickens a little, pour into a baked pie shell. Set in refrigerator to thicken. Serve with Cool Whip. Garnish with nuts, if desired.
