Pasta Fagioli

Be sure to serve this soup with crusty bread for mopping.

Ingredients:

  • 2 Tbsp. extra virgin olive oil
  • 2 large celery ribs, diced
  • 1 small onion, diced
  • 3 tsp. minced garlic
  • 2 tsp. dried parsley
  • 1/2 tsp. dried basil
  • 1/4 tsp. dried oregano
  • 1/4 tsp. crushed red pepper flakes, or more to taste
  • salt to taste
  • 2 (14.5 oz.) cans chicken broth
  • 1 (14.5 oz.) can Italian style diced tomatoes, not drained
  • 2 (8 oz.) cans tomato sauce
  • 1 cup uncooked ditilini pasta
  • 1 (15 oz.) can cannellini (white kidney) beans, drained
  • Parmesan cheese, grated or finely shredded for garnish

Directions:

Heat olive oil in a large saucepan over medium heat and cook the celery and onion until soft. Add garlic, parsley, basil, oregano, red pepper flakes and salt and saute briefly. Stir in chicken broth, diced tomatoes and tomato sauce and simmer on low for 20 minutes.

Add pasta and cook about 10 minutes, or until pasta is tender.

Add beans, mix well and heat through. Ladle into serving bowls, generously sprinkle with Parmesan cheese and serve.

Love Pasta Fagioli soup! It's what we always get at Olive Garden on the luncheon menu. All you can eat of salad, soup and breadsticks. Best lunch I can think of in the wintertime, and not too bad in the summer either for that matter.

I haven't been to Olive Garden in a really long time, Lee, and have never tried their Pasta Fagioli but I sure do love their all you can eat salad and usually ask for extra peperoncini in it. I just made the Fagioli again yesterday to give to a neighbor friend who helps me out a lot and added an extra cup of dittalini. It turned out like a great, thick pasta type stew. ;-)

I'm to the point where all I need to do is read the name of the recipe to know that it will be from Deeli. I know they all taste wonderful but I haven't the talent or the enthusiasm for cooking complicated things like that. Old bachelors are lazy, ya know.

Pasta Fagioli

Ingredients:

  • 1 Tbsp. olive oil
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 thin slice onion, diced
  • 1/2 tsp. chopped garlic
  • 16 oz. crushed tomatoes

  • 1 (14 ounce) can vegetable broth
  • freshly ground black pepper to taste
  • 1 tablespoon dried parsley
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 cup ditalini pasta

Directions:

Heat olive oil in a saucepan over medium heat. Saute carrot, celery and onion until soft. Add garlic and saute briefly. Stir in tomatoes, broth, pepper, and parsley- simmer for 20 minutes.

Bring a large pot of lightly salted water to a boil. Add ditalini pasta and cook for 8 minutes or until al dente; drain.

Add beans to the sauce mixture and simmer for a few minutes. When pasta is done, stir into sauce and bean mixture.

This a recipe that my MIL shared with me. It's her family's version of Pasta Fagioli. It's really inexpensive to make and tastes sooo good.


Ingredients

Directions

In a crock-pot, put in all ingredients except pasta. Cook in crock pot for 3-5 hours or until beans are to your desired consistency. In a separate pot on the stove, cook pasta according to the directions on the box. Add pasta to bowls and spoon bean mixture over pasta and mix well. Serve with warm bread or salad.

I love this meal and even my 3 year old daughter loves this. I love to add a couple of splashes of hot sauce to mine. Hope you all enjoy! :o)

A cup of olive oil? I just want to make sure that isn't a typo before I try it. I have made other versions but never with that much oil. Thanx (11/05/2007)

Is that a 1 pound bag of beans? If so, the only liquid called for is the olive oil in the crock pot? Thanks in advance.
