Chocolate-Pecan Pudding CakesIn a large bowl, combine the flour, sugar, 3 Tbsp. cocoa, baking powder and salt. Combine the milk, butter and vanilla; stir into the dry ingredients just until combined. Stir in pecans. Spoon into six greased 6 oz. custard cups.

 

Spring Party SaladUse up the veggies in your freezer with this marinated salad.

 

Sour Cream EnchiladasBrown beef, drain fat. Add onion and green pepper, continue cooking until onion and pepper are soft. Add salt, pepper, Picante sauce, chili powder, cumin, garlic powder, Tabasco and ripe olives.

 

Ramjam ChickenIn a large, resealable plastic bag, combine the soy sauce, wine, lemon juice, oil, Italian-style seasoning, ginger, garlic, onion powder and ground black pepper.

 

Broccoli au GratinIn a large saucepan, bring the salted water to a boil. Add the broccoli and boil about 5 minutes. Drain into a colander and spray with cold water to stop the cooking process.

 

Cocktail CheeseCream softened cheese. Add remaining ingredients and mix well. Pack in oiled mold and chill several hours.

 

Iced Tea SyrupDissolve sugar in water and boil 10 minutes. While hot pour over unstrained fruit juices and rinds. Add 2 large handfuls of mint and bruise; cover with tight lid overnight.

 

Salmon Loaf with Cucumber SauceMelt butter, blend in flour, add milk and salt and stir until thick. Drain and flake salmon. Add salmon and other ingredients to cream mixture.

 

Cantonese Egg RollsMix all ingredients together. Place 2-3 teaspoonfuls mixture in center of egg roll wrappers. Wrap 2 sides over and roll up. Fry in lots of oil until golden.

 

White Pecan FudgeLine a 9 inch square pan with foil. Grease the foil with 1/2 Tbsp. butter and set aside. Butter the sides of a large heavy saucepan with 1/2 Tbsp. butter.
