Arroz a la Valenciana (Valencia-Style Rice)This is a Nicaraguan Recipe. Season chicken and pork with salt and pepper. Fry in oil in a stockpot until brown. Set aside the chicken and pork pieces. In the same stockpot, fry the anatto seeds in the remaining oil to give a golden-orange color, then discard seeds.

 

Picante ChickenYummy, easy dish with a little spice. Coat chicken with egg, then with cornmeal. Place in 9x13 inch baking pan. Cover with picante sauce. Bake, covered, for 1 hour at 375 degrees F. Sprinkle with shredded cheese and taco chips.

 

Chili ChipsYummy party item! Brown sausage and ground beef in skillet, stirring until crumbly; drain. Add cheese and seasonings; mix well. Spread on party rye slices. Place on baking sheet. Freeze until firm.

 

Baked Ham and PotatoInexpensive, quick, and easy meal to prepare. Depending on the quantity you are making, put ham slice(s) in baking dish, sprinkle with mustard and brown sugar. Place slices of potato around and over the ham.

Corn and Crab SoupMelt butter or margarine in saucepan. Add spring onions chopped and fry gently until softened but not browned. Sprinkle in the curry powder and fry for a minute or two making sure it doesn't burn.
