Apricot Ginger Squash

This is so easy and reheated leftovers are yummy too ;-)

Ingredients:

  • 1 small acorn squash
  • 2 Tbsp. apricot preserves
  • 4 tsp. butter, melted
  • Advertisement

  • 1 1/2 tsp. soy sauce
  • 1/4 tsp. ground ginger

Directions:

Preheat oven to 350 degrees F.

Cut squash in half, discard seeds, cut a thin slice from bottom of squash so it will sit flat and place halves, hollowed side up, in a large greased baking dish.

Combine the remaining ingredients, spoon over squash, cover and bake for 45 minutes. Uncover and bake 15 more minutes or until tender. Scoop squash and apricot mixture from the skins, mash and mix in a bowl and serve.

That sounds a lot better than the same old brown sugar and butter I use in mine.
