Can squash plants be pruned to encourage new growth?

In a word, NO. Pruning actually stops growth. Just allow to mature as God intended. Some years you will get more squash than needed and others your production will be very little. Only God will decide. Provide liquid fertilizer in the early growth period on weekly basis for best production. Also place small container of jelly, honey, maple syrup near plants at the bloom time to attract bees for pollination.
