Zucchini Gratin

Ingredients:

  • 2 medium zucchini
  • 3 Tbsp. extra virgin olive oil
  • Salt and pepper. to taste
  • 1/3 cup Parmesan cheese (or more to taste), finely shredded

Directions:

Preheat oven to 400 degrees F. Slice the zucchini in half lengthwise and in half again crosswise. Place in a small baking dish, skin side down.

Drizzle olive oil evenly over the zucchini, sprinkle with salt, pepper and Parmesan and bake for about 25 to 30 minutes, or until zucchini is tender and cheese is golden brown.

Another thing or two to do with zuchinni is to proceed the same as you said, but instead of parmesan cheese, sprinkle with creole seasoning or any of the Mrs. Dash flavors. Yummy.

Thank you so much for leaving a comment, lynnt! I will definitely try your idea of using various seasonings instead of salt and pepper but the parmesan (or other cheese or crumb topping) must remain or it will no longer be a 'gratin' recipe. :-)
